Cinnamon Oatmeal Carrot Cookie Sandwiches

I mean…. Not only is this recipe an upgrade to your regular oatmeal cookie, but now it’s two cookies pressed together with a marvellous frosting. My mouth waters just writing this.

I have said before that I am not much of a baker, I really do tend to burn the outside of most my sweets with keeping them raw in the inside, how is that even possible? However, I am not someone who gives up. So, I decided to make these little delectable treats. They are not only tasty, but super easy to make.


I think oatmeal cookies are probably my favourite cookie. I love the chewiness of them mixed in with the hardened raisins. Am I the only one here who actually likes raisins? I personally think the moistness of the carrots really gave these oatmeal cookies a little fluff to them.

These cinnamon delights are perfect for the fall, maybe even served with some warm vanilla ice cream.


 

Cinnamon Oatmeal Carrot Cookie Sandwiches


Cookie dough

  • 1/2 cup softened butter

  • 1/2 cup brown sugar

  • 1/4 cup white sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1 cup all purpose flour

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 1 cup rolled oats

  • 1 cup carrots, finely grated

  • 1/4 cup raisins

In a large bowl whisk together butter, vanilla extract, sugar until light and creamy. Add egg and continue to whisk. Once combined add remaining ingredients. Mix until you have a thick batter. Fold in carrots and raisins.

Preheat oven to 180C.

On a baking sheet create small balls with the dough and bake for about 9-11 minutes, until golden brown.

Remove from the oven and allow the cookies to fully cool.









 

Frosting

  • 1/4 cup softened butter

  • 1 tsp vanilla extract

  • 8g vanilla sugar

  • 150g cream cheese, room temperature

  • 2 cups powder sugar

In a medium bowl add softened butter, vanilla sugar, vanilla extract and cream cheese and whisk until combined. Add powdered sugar slowly and whisk until no clumps are left. Cool for about 30 minutes prior to assembling the cookies.

To make the sandwiches take one half of your cookies and add the frosting, add the second cookie ontop and put to the side. Once all cookies sandwiches are made place into the refrigerator for 30-1 hour until firm.
