Granola is just about the best thing ever invented. I love granola. I love it with yoghurt, with milk, as a snack, on ice cream, you name it. The crunchy bits and dried fruit that get stuck in between your teeth are just heaven to me. Yes, I actually do enjoy when some food types get stuck between my teeth.
I started to get tired of buying the good granola that costs a fortune and is jammed packed with sugar, especially when I have all the ingredients sitting on a shelf in my kitchen.
I never really made granola before, and therefore did not realize how easy and simple it actually is.
I obviously, like always made way too much granola, but I shared a big portion of it to both my sister and mother in law, and they both really loved it. Not to mention, that when you make this batch of granola it can store in a Tupperware for a good month or two.
Not only was this granola super tasty, but healthy as well. No additional sugar was required than that what is found in maple syrup and honey, and it was jammed packed with healthy nuts and seeds to give you those extra nutrients you need in the morning.
You can make this with literally any nuts, seeds or dried fruit you have lying around. You can pimp it as you please and based on the season use whatever taste concoction fits your needs.
I have vowed that from now on, homemade granola is the way to go. Easy, simple and cheap. What other convincing is needed?
Healthy Vegan Granola
4 cups oats
1/2 cup nuts
1/2 cup dried fruit
1/4 cup chia seeds
1/4 cup fennel seeds
1/2 cup shredded coconut
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/2 cup honey
1/2 cup coconut oil
1/4 cup maple syrup
2 tbsp cinnamon
In a small pot melt coconut oil, maple syrup, and honey.
Preheat oven to 180 C.
In a large bowl add all ingredients and mix. Add coconut oil mixture and mix again. Spread mixture over a lined baking sheet.
Bake for 20 minutes, every 10 minutes check on the granola and mix with a spoon to make sure the entire batch is cooked.
Remove from oven and allow to cool.
